Jarlsberg quesadillas

Quesadilla

Ingredients

  • 2 wheat tortillas
  • 150 g Jarlsberg Original or Jarlsberg Special Reserve, sliced
  • 150 g cooked bacon slices

Ingredients for salsa fresca

Chop finely and combine:

  • 2 tomatoes
  • 1 shallot
  • 1 garlic clove
  • 1 green or red chili pepper, seeds removed
  • 2 tbsp fresh coriander
  • Juice of 1 lime
  • Salt and pepper to taste

Layer the cheese, bacon and a big spoonful of the salsa fresca on one side of each wheat tortilla, and fold the other half over. Press the edges together, slightly flatten and fry tortillas in a medium hot dry pan for about one minute on each side. Cut each tortilla in four pieces and serve with the rest of the salsa fresca on the side.
