Jarlsberg shashlik

Ingredients

  • 12 long skewers
  • 600 g Jarlsberg in approx. 1-inch cubes
  • 18 slices bacon
  • 18 pearl onions

Cut the bacon slices in half and wrap around the Jarlsberg cubes. Alternate 3 Jarlsberg/bacon cubes and 3 pearl onions on each of the 12 skewers. Barbecue or grill in the oven for 2 – 3 minutes on each side.

Relish

  • 50 g cucumber, seeded
  • 40 g black or green olives
  • 20 g capers
  • 50 g green or red pepper, roasted
  • 1/3 cup olive oil
  • 2 tbsp lemon juice and grated zest
  • Salt and pepper

Chop all the ingredients and mix with the olive oil, lemon juice and zest. Season to taste with salt and pepper.
