Carrot Cake with Snøfrisk


  • 4 eggs
  • 3 cups sugar
  • 2 – 3 carrots, grated
  • 100 g butter, melted and cooled
  • 4 cups flour
  • 1 tsp vanilla sugar
  • 2 tsp baking powder
  • 2 tsp cardamom


  • 50 g butter
  • 200 g Snøfrisk Natural
  • 2 cups icing sugar
  • Grated orange peel for decoration


In a large bowl, beat or whisk the sugar and eggs until light and fluffy. Gently fold in the grated carrots and melted cooled butter. Pour the batter into a well-greased baking tin (25 x 30 cm). Preheat oven to 400° and bake in the centre of the oven for 25-30 min. To make the icing, beat room temperature butter together with all the ingredients (except the orange zest) until smooth. When cake has cooled, spread the icing evenly over top and sides, and sprinkle with the orange zest.
