with bacon and pearl onions
- 12 long skewers
- 600 g Jarlsberg® in approx. 1-inch cubes
- 18 slices bacon
- 18 pearl onions
- 50 g cucumber, seeded
- 40 g black or green olives
- 20 g capers
- 50 g green or red pepper, roasted
- 1/3 cup olive oil
- 2 tbsp lemon juice and grated zest
- Salt and pepper
Chop all the ingredients and mix with the olive oil, lemon juice and zest. Season to taste with salt and pepper.
Cut the bacon slices in half and wrap around the Jarlsberg® cubes. Alternate 3 Jarlsberg®/bacon cubes and 3 pearl onions on each of the 12 skewers. Barbecue or grill in the oven for 2 – 3 minutes on each side.
